House have a long standing relationships with other wine growers, primarily in the Grands Crus Chardonnay villages, help them to improve assemblage and ensure consistent quality year on year.<\/p>\n

History:<\/p>\n

Ployez-Jacquemart is a family House created in 1930 by Marcel Ployez and his wife Yvonne Jacquemart.
\nThe whole essence of Ployez-Jacquemart rests on continual search for excellence, understanding of the Champagne terroir and abilities to craft truly fine wines. These skills have been passed down through three generations. Respect for this noble heritage is the cornerstone of approach to Champagne production.<\/p>\n

About the wine making:<\/p>\n

Strict rules are followed each year to ensure that the very best is made of each harvest. Using a blend of grapes from own Grands Crus vineyards, and produce from a handful of carefully selected wine growers, many of whom we have been working\u00a0with for 30 years. All the grapes are\u00a0hand-picked and sorted by variety, cru and specific vineyard\u00a0\u2013 this forms the basis for the pressing at the\u00a0estate. No expense is spared;\u00a0only the\u00a0best\u00a0\u00a0juice from the first pressing is considered of sufficient quality for our use. Laurence Ployez\u2019 s meticulous attention to every detail is evident at every stage of the process. Grape musts are left to settle not once but twice before fermentation. The\u00a0wine is moved frequently from one vat to another to ensure a high level of oxygenation;\u00a0only\u00a0light filtration is used for wines produced in vats but none at all for those\u00a0vinified\u00a0or aged in wooden barrels or foudres.<\/p>\n

Using of traditional yeasts, combined with very slow bottle fermentation in our (10\u00b0celsius) 25 metres deep cellars, give to wines extremely fine bubbles. With the exception of\u00a0L.d\u2019Harbonville, none of assemblages are written in stone, each year is a new challenge to make the very best of each harvest. At Ployez-Jacquemart they feel that Champagne is no different to other long established wine growing areas like Bordeaux or Burgundy and they follow a very strict policy of \u201cquality not quantity\u201d.<\/p>\n

Our mission is to leave the structure of each wine intact, letting the true character and personality of the harvest shine through. When the time comes to disgorge, after up to 12 years in cellars, only a very minimal \u201cdosage\u201d is added , typically 3-4g\/litre.
